Emu Egg Production Season Has Ended~~Next emu egg production season will begin in November or December 2010 and continue through April 2011.

Fresh Emu Eggs are gathered daily and are great for cooking or eating.  The emu eggs are very rich and creamy as they have a very large egg yolk proportionately larger than the white part of the emu egg.  They cook very light and fluffy and are great for use in any baking--especially in making the famous Biscochitos cookies very popular here in our state of New Mexico.  And of course the beautiful emerald green eggshell is just awesome for display or accenting any decoration.  Our emu egg production season in December, January, and February is a most exciting time for us and collecting the eggs is a real adventure.  We rinse all fresh emu eggs and store at cool temperatures until shipping.

Emu Hatching Eggs~will be available beginning November or December 2010.

We also have the Fresh Emu Eggs for Hatching.  The emu hatching eggs are gathered daily, rinsed and sanitized and held at a cool temperature until shipping.  We carefully pack and ship the emu hatching eggs Priority Mail and delivery is usually in 2 or 3 days to most areas in the US.  We always carefully select the best emu eggs for incubation and hatching.  Our emus live in large group paddocks so the rate of fertility is very good in our emu hatching eggs.
